Cherry Fudge {Two Ingredients}

If you watch Parenthood, you might remember the episode where Joel tells Julia that her brain is “like a hamster running on a hamster wheel” after finding her awake after a sleepless night. My husband and I are completely addicted to Parenthood. It’s the one thing we try to make sure we get to watch together every week. Sometimes it might be from the DVR a few nights after it actually airs, but eventually we get there. Anyways, this brain that Joel describes could totally be mine. It is mine. I swear some nights my brain has run a marathon in thoughts before the night is over. Kids. Husband. Food. Projects – our kitchen is in need of remodeling and our basement NEEDS finished. Crafts. It goes on and on, kind of like the Energizer Bunny. I am not sure these thoughts are fluid or would even make sense to anyone else. Last night’s marathon consisted of thoughts about our fridge and how it has decided to leak water out the bottom all over the floor resulting in a puddle in the basement (thank heavens my husband found it before any real damage occurred), to the package of cherry chips that I found while cleaning the freezer of said fridge out, to this post for strawberry fudge. I remember thinking, if it works with flavored frosting and vanilla chips, why wouldn’t it work in reverse? Which opens endless possibilities of entirely new flavor ideas. Like, cherry, and peanut butter, and butterscotch. And then if you consider ideas for add-ins, cherry chocolate with a chocolate drizzle or peanut butter cup fudge with mini chocolate chips or even peanut butter chips with chocolate frosting, and I am sure you could do something with mint chips, and wait, what about those marshmallow bits… I think you see where this is going. And so this cherry fudge was born. Since it is Valentine season, I couldn’t resist festive sprinkles, but next time, a chocolate drizzle for sure. And I have totally got to try a peanut butter cup version. I’ll let you know how that works. 

Cherry Fudge {Two Ingredients}
  1. 1 (10 oz.) pkg Cherry Chips
  2. 1 (16 oz.) can of vanilla frosting (I wonder if cream cheese frosting would taste like cheesecake fudge?)
  3. Sprinkles, optional, but fun
  1. Spray an 8x8-inch square pan with cooking spray. In a large microwave bowl, melt chips in the microwave, stirring every 30 seconds. When smooth, stir in frosting. Pour into prepared pan. Sprinkle sprinkles over fudge. Place in fridge until set. Cut and enjoy!
  1. I like to use a disposable 8x8-inch square pan. It pulls right off the fudge making it super easy to cut. You could also line a regular pan with foil. Which ever you choose, you'll want to use cooking spray.
