Chewy S’mores Bars (Anytime S’mores) – No Bake {and ***Giveaway*** for The S’mores Cookbook}

Just because summer’s officially ended doesn’t mean you can’t enjoy S’mores anymore ~my family loves these Chewy S’mores Bars anytime! Making the campfire version is one of our favorite summer activities and now that school has started, and winter is soon to follow, I just don’t foresee anymore firepit nights in our near future. But that’s okay because we have these treats that we can make anytime. They are perfectly portable, and can even be neatly wrapped into individual bars if necessary and are totally delicious! These Chewy S’mores Bars are super fun to pack in lunches and a great after school snack as well!

Chewy S'mores Bars
Author: Jasey's Crazy Daisy
  • 9 cups Golden Grahams Cereal
  • 4 cups of Rice Krispie Cereal
  • 2 16 oz packages of regular marshmallows
  • 9 Tablespoons butter
  • 1 3 oz package of Marshmallow Bits
  • 1 11.5 oz package of milk chocolate chips, frozen if time permits
  1. Grease/spray a 9x13 pan. Measure cereal and pour into large bowl. In a large soup pot, melt marshmallows and butter together until smooth and creamy, stirring occasionally. Pour cereal into soup pot, and stir until well coated. If you're soup pot isn't big enough you can pour the marshmallow mixture over the cereal in that big bowl, but then you have two sticky marshmallow pans to clean, so if your pot is big enough totally pour the cereal and save yourself some scrubbing! Stir in marshmallow bits and chocolate chips at the very end when the marshmallow mixture has cooled a little. I like to freeze the chocolate chips if I have time, but if not, I wait until the absolute last second and stir quickly so they don't melt completely away. Spread mixture into prepared pan. Cool and cut into bars. Enjoy!

If you’re just as sad as I am that school has started and you have to share your kids with the world, you can take comfort knowing that you don’t have to give up your S’mores too! Not only do you have my recipe for Chewy S’mores Bars, you can indulge with toasted marshmallows, creamy chocolate, and sweet graham crackers all winter long in more delicious combinations than you can imagine with recipes from The S’mores Cookbook by Susan Whetzel. Mu favorite summer memory is watching my grandmother make peach cobbler and the anticipation of it coming out of the oven and served with vanilla ice cream. My grandmother passed away long ago, but I now share this treat with my daughter (who is named after my grandmother) every summer!!
