Quinoa Salad

In all honesty this Quinoa Salad isn’t much different from the Southwest Salad I’ve already shared with you, however, I have come to always make it with quinoa instead of rice. I love it prepared this way, my kids love it prepared this way, and my husband even likes it- quinoa, tomatoes, and all. I’ve made it for a few summer barbeques recently and everyone raves about it and asks for the recipe, so I think its earned it’s own spot in my recipe box. If you can’t stand the thought of quinoa or just love rice, go ahead and make it the old way, but we’ve come to love it this way. I make it with red quinoa sometimes, and really like it, but I can’t seem to find it locally anymore and so I have been making it with regular quinoa and it’s still lovely. The only difference is that red quinoa seems to have a slightly sweeter flavor, like it has a hint of honey in it. If you are looking for a new salad this summer, you should totally give this Quinoa Salad a try. It’s loaded with healthy veggies, delicious protein from the quinoa, and has a wonderful light and flavorful dressing. Did you know that quinoa is an ancient super food? I just made it this past weekend and my son is already asking for it again. I totally love it when my kids ask for healthy foods. Don’t get me wrong, my kids like Gushers and ice cream just like any other kid, but they are learning to enjoy healthy foods and notice how much better they feel when they make those kind of food choices. Quinoa Salad
  1. 1 cup prepared quinoa
  2. 2 1/2 tablespoons extra virgin olive oil
  3. juice of 1 lime
  4. zest of 1 lime
  5. 1 teaspoon honey
  6. 2 cloves garlic, minced
  7. 1/2 teaspoon cumin
  8. 1 cup frozen corn, thawed.
  9. 10 oz. grape tomatoes, halved
  10. 1 jalapeno, diced (seeded if you want to cut out the heat)
  11. 1 bunch of green onions, chopped
  12. 1/4 cup chopped cilantro
  13. 1 avocado, diced
  14. Pepper
  1. Prepare your quinoa. Let cool. Stir together olive oil through cumin in a small bowl to make dressing. Combine the rest of the ingredients in a medium bowl and pour dressing over salad, stir gently until mixed well. Season to taste with pepper.
  2. I like to stir everything except the avocado in and put it in the fridge for an hour or so to let the flavors blend and add the avocado in just before serving. Sometimes I even put everything but the avocado together in the morning, and just before dinner add the avocado in. Yum! Don't worry though, the leftovers, if there are any will still be ok the next day. The lime juice does it's magic and the avocado seems to keep pretty well. Enjoy!
