Caramel Apple Chex Mix

Delicious Caramel Apple ChexFall. We’ve talked about Fall before and how I have this love-hate thing going with it. I hate sending my kids to school. What can I say? They are pretty darn cool little people that I love spending time with. And yes, I’m very selfish with the time that I have with them. I know that I am going to blink and they will be all grown up and off conquering the world. From that perspective, I simply do not like Fall.  Thank goodness for everything else that Fall has going for it! I find the cooler {not COLD} but cooler temps refreshing. I love the colors. I saw a quote on Facebook that read, “My favorite color is Fall,” and I think it’s spot on. And finally, let’s not forget about the flavors of fall! Apple, pumpkin, caramel, cinnamon, cloves…. seriously, what’s not to love? I think I love them all. And this recipe combines several classic fall flavors into one Chex mix treat that is to die for. I mean it. We love Chex mix  and I have shared several versions with you already. My husband always goes back to my original Caramel Chex. It’s always been his favorite until now. This Caramel Apple Chex Mix is his new favorite Chex mix. I have to say, it’s crazy delicious. Like maybe even one of those treats that holds bribing power. It makes a ton, and is virtually fool proof which gives you even more reason to make it. Keep it all to yourself, or stash some away in treat bags tied with festive ribbons to give as holiday gifts (Halloween, Christmas, what ever the reason your friends will love you for it, trust me).  Are you ready to check out the recipe yet?

Caramel Apple Chex Mix

Ingredients
  1. 1 pound butter
  2. 3 cups brown sugar
  3. 1 cup white corn syrup
  4. 2 (13.75 oz.) boxes of Apple Cinnamon Chex cereal
  5. 1 teaspoon vanilla
  6. 1 teaspoon baking soda
  7. 1 cup white chocolate chips
  8. 2 brown paper bags from your grocer’s checker
Instructions
  1. First, open paper bags and place one inside of the other. Pour Chex cereal into bags. Set aside. Cover table or counter top with wax paper and spray with non-stick cooking spray. In a large kettle, combine brown sugar, butter, and corn syrup and bring to a boil on the stove, stirring frequently as not to burn. When everything is all melted and incorporated, take off heat and add vanilla and baking soda. Stir until foamy. Pour over the double bagged Chex. Roll down top and shake well. Microwave for 2 minutes and shake well. Microwave for 2 more minutes and shake again. Make sure to turn the bag on all sides each time you shake to spread the caramel. Open bag and check to make sure the caramel is spread evenly throughout the Chex. If not, shake again. However, you should be able to dump the Chex onto the sprayed wax paper. Spread the mix as thin as possible. (***See notes for directions to drizzle white chocolate over mixture rather than coat it with white chocolate.) Sprinkle white chocolate chips over mixture and stir until mixture is evenly coated with melted chocolate. Stir every now and again to keep mixture from clumping together. Cool. Serve immediately, or package in your favorite containers to share as gifts.
Notes
  1. Alternatively you can drizzle the white chocolate over the Chex mix like this: Pour white chocolate chips into zip-loc bag. Place in microwave for 20 seconds and use fingers to mix. Repeat until white chocolate is melted. Cut a small corner off of the bag and drizzle white chocolate over cereal mix. Let stand until chocolate sets.
  2. My family adores this Chex mix as is but I think it would be fun to mix in some nuts and/or dried apple pieces.
