Delicious Caramel PuffCornThe first thing you need to know about this Caramel PuffCorn is that it is amazing. You need to make it, now! Yesterday would have been better. Let me tell you about this caramel puffcorn. I’ve seen it around. I was never ever tempted to try it though. I think I had the cheese puffcorn in my head or something, or it just looked to plain, but whatever the reason, I never even thought to try it. On Halloween, my kids and I were trick-or-treating and one of our neighbors stuck little treat bags in my kids buckets and made sure I knew she had put it there so when I saw the homemade treats I would know it was safe to eat and not from a stranger. I didn’t give it much thought until we were back home and my mini pulled hers out. I snuck a quick bite, set it on the counter and tended to some trick or treaters. When they were gone I went back to the counter to get some more and the entire bag was nearly gone. My dad had found it and so did my husband. Before I knew it I polished the rest off and went to check out one of my son’s buckets. He had scored some of this outrageous caramel puffcorn too! It’s buttery, and caramely, and I love the light airy texture! I opened it, my husband rushed over when he noticed I had another bag, and my son asked, “what are you two doing? Is that mine? Is it good?” I nonchalantly said, “It’s ok.” He knew better though and wanted to know why we were focused on that stuff instead of all the other treats around. He tasted it and put it back in HIS basket – where he wanted it to stay. What a stinker!!!! My husband asked, “Well you can just make some, can’t you?” I needed to buy some fundraiser stuff from that neighbor’s daughter anyways, so I set off among all the trick or treaters to take care of the fundraising and to beg for the recipe. Ok, so the fundraiser was just an excuse, I really just wanted the recipe, but after you try this stuff you will totally understand. My neighbor (Hi, Stacy) told me she lost her recipe, the one she liked even better, and sent me a recipe to build from. Which I did and we love this recipe. I have made it five times since Halloween. Everyone who has tried it raves about it and asks for the recipe.  Just make it. This Caramel PuffCorn is too die for. 

Caramel PuffCorn
  1. 2 (3.5 oz) bags PuffCorn
  2. 1 cup butter
  3. 1 cup brown sugar
  4. 1/2 cup light corn syrup
  5. 1/4 teaspoon salt
  6. 1 teaspoon baking soda
  7. 1/2 teaspoon vanilla
  1. Cover table top with wax paper and spray it with cooking spray. Preheat oven to 250 degrees Spray large roaster with non-stick cooking spray. Pour puffcorn into roaster. Set aside. In a 2 quart sauce pan, melt butter, brown sugar, and corn syrup together over medium heat and stir in salt. Bring to a boil and cook for two minutes. Add vanilla and baking soda (the mixture will foam up). Stir well and remove from heat. Pour over puffcorn and stir until coated. Bake, stirring every 10 minutes with a wooden spoon.Make sure to stir it well so that most of the mixture from the bottom gets moved to the top so it doesn't burn. Most of the recipes I have seen say to bake this anywhere from 40-60 minutes. I think this is a personal preference. The longer you bake it, the darker brown it gets and it starts to taste more like the Karmel Corn you buy at the mall. My family prefers it after 20-30 minutes, on the lighter side. You'll know it's done because the caramel on the spoon will harden after stirring rather than being sticky or gooey. When it's baked to your liking, spread the caramel puffcorn over the waxed paper and cool. If you give it a good stir every now and again as it cools, it won't clump as much or stick to the paper.
  1. I've even made a batch of this with unsalted butter - because that is what I had. In this case, I added an extra teaspoon of salt (1/4 teaspoon per stick) and it was fabulous! This is a great recipe to put into treat bags for holiday gifts, classroom treats, or just as something fun for friends!

    This is wonderful! I met you at Kmart Christmas eve, the associate whom was bagging your merchandise. I thought of this mouth watering treat thru out the rest of my day, searching my mind to make sure I had the required ingredients to try it this weekend. Ironically enough my sister in law included some in her Christmas package to us. Stacey its fabulous! Lol sad to say she didn’t send but just enough to whet the appetite so to speak.
