This S’mores Chex Mix is fabulous!!! You will love it because it takes both our favorite Caramel Chex and the classic s’mores flavors and combines them into these little incredible caramely s’moresy bite-sized treats that just might knock your socks off. The recipe makes a ton and is easy to transport which makes it great for just about any party or get together. You can serve it in big bowls so guests can grab and snack as they go or put it in individual bags or other fun containers creating individual servings if that’s more your style. It’s also easy to make. You combine a little butter, corn syrup, and brown sugar in a large pot and heat it until it’s melted and smooth. Take the mixture off the heat and stir in a teaspoon of vanilla and baking soda. Now pour your caramel mixture over your Chex cereal (that’s been poured into double lined paper bags) and shake until coated. Place in microwave for two minutes, shake, and repeat. When finished, pour mixture onto wax paper that’s been sprayed with cooking spray and spread it out using a spatula. After cooling for a minute or two, sprinkle with marshmallow bits and stir until they are mixed in evenly. Next sprinkle with chocolate chips and stir again until mixed well. The chocolate kind of melts coating the Chex with a delicious glaze. If you’d like to keep the chocolate from melting so much, try freezing the chips before adding them. Leave the mixture to set up. I always have to watch it closely because my family loves to sneak tastes, they just can’t seem to wait. Every five minutes or so you will want to give everything a good stir to keep the mixture from hardening into one big clump. That’s all there is too to making this delicious chewy s’mores treat. - 1 pound butter
- 3 cups brown sugar
- 1 cup white corn syrup
- 1 14 oz. boxs of corn Chex cereal
- 1 oz. box of Golden Grahms cereal
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 container 3 oz. of Marshmallow Bits
- 1 cup milk chocolate chips
- 2 brown paper bags from your grocer’s checker
First, open paper bags and place one inside of the other. Pour cereal into bags and set aside. Cover table or counter top with wax paper. Spray with non-stick cooking spray. Bring the first three ingredients to a boil on the stove in a large kettle, stir frequently as not to burn. When everything is all melted and incorporated, take off of heat and add vanilla and baking soda. Stir until foamy. Pour over the double bagged cereal. Roll down top and shake well. Microwave for 2 minutes and shake well. Microwave for 2 more minutes and shake again. Make sure to turn the bag on all sides each time you shake to spread the caramel. Open bag and check to make sure the caramel is spread evenly throughout the cereal. If not, shake it up again. However, you should be able to dump the cereal onto the sprayed wax paper. Gently spread the cereal into an even layer. Sprinkle with Marshmallow Bits and stir until they are evenly mixed throughout the cereal mixture. Sprinkle with chocolate chips, mixing well. Every once in a while as the mixture cools give it a good stir so that it keeps from drying in one huge clump.
