My mom goes kind of crazy at Christmas – a good kind of crazy, unless you are worried about your waistline expanding, then maybe it’s not so good. She and my dad host Christmas Eve and let me tell you, they know how to throw a party. She always makes sure she’s got a special treat for everyone. Prime Rib. Chicken Wings. Banya Calda. Durt Dip. Poticia. Fudge. Cherry Nut Bread. Pizzelles. Hot Buttered Rum. Sugar Cookies. I could go on and on. For as long as I can remember Butter Toffee Crunch has been on the menu. I’ve always found it’s crunchy toffee bottom and smooth creamy chocolate topping that’s sprinkled with finely ground nuts irresistible. While I was creating my S’mores Chex Mix, I had one of those light bulb moments after adding the chocolate to my original Caramel Chex when I noticed that it tastes just like Butter Toffee Crunch, or even Saltine Toffee (or Christmas Crack as so many of you know it by). Adding just that bit of chocolate transforms it into this Butter Toffee Chex Mix goodness. You’re going to find difficult to resist which is why you totally want to make this. Don’t ask how I know. I think it tastes a little like Almond Roca. Even though I sprinkled mine with finely ground walnuts, you could use sliced or slivered almonds or pecans or what ever other kind of nut that you like. And if you really just can’t stand nuts, just leave them out. No worries, it will still taste like toffee, kind of like Heath or Skors candy bars. I think you are going to love this Butter Toffee Chex Mix recipe because it’s incredibly easy to make, feeds a crowd, and it crazy addicting.

- 1 pound butter
- 3 cups brown sugar
- 1 cup white corn syrup
- 2 14 oz. boxes of corn Chex cereal
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 cup milk chocolate chips
- 1 1/2 cups finely chopped nuts
- 2 brown paper bags from your grocer’s checker

First, open paper bags and place one inside of the other. Pour Chex cereal into bags and set aside. Cover table or counter top with wax paper. Spray with non-stick cooking spray. Bring the first three ingredients to a boil on the stove in a large kettle, stir frequently as not to burn. When everything is all melted and incorporated, take off of heat and add vanilla and baking soda. Stir until foamy. Pour over the double bagged Chex. Roll down top and shake well. Microwave for 2 minutes and shake well. Microwave for 2 more minutes and shake again. Make sure to turn the bag on all sides each time you shake to spread the caramel. Open bag and check to make sure the caramel is spread evenly throughout the Chex. If not, shake it up again. However, you should be able to dump the Chex onto the sprayed wax paper. Gently spread the Chex into an even layer on waxed paper. Sprinkle with chocolate chips and nuts. Carefully stir mixture so that chocolate melts and lightly coats the cereal and the nuts mix in evenly. Stir every once in a while as it cools, so that it doesn’t dry in one huge clump.

These stuff is very good. Does it dry…….I have had it on the wax paper for 5 hours and it still is wet. Did I do something wrong? Thank you
Thanks, Gail! Mine has always dried, if yours is sticky maybe your microwave isn’t as hot and might require another couple minutes…
can you make this in the oven instead of the microwave
I’ve never tried it – I’ve thought about using a method like described in my caramel puffcorn though – since they are so similar else wise. Let me know if you try it 🙂
