I don’t know about you, but when May rolls around I need easy dessert recipes like this Lemon Cream Pie Dip to get me through the month. I love May and I hate May all at the same time. It’s filled with graduation barbecues, confirmation parties, bridal showers, baby showers, Mother’s Day, school celebrations, recitals, and in my family birthdays too. May is just one big party! Which is fun, but crazy busy at the same time. It can be difficult to stay on top of it all. With spring activities in full swing, that never ending laundry nemesis of mine, persistent household chores and of course the extra TLC the yard needs in order to whip it into shape now that the weather is turning nicer, it doesn’t end there either does it? Is your head spinning yet? Mine is. In order to make it through all this with my sanity in tact, I fall back on recipes like this easy creamy lemon dip that are simple to make yet festive and fun to celebrate with. What’s May like for you? I am betting you are feeling the mania as well! What are your tips and tricks to survive the busy days of May?

- 1/2 pint heavy whipping cream
- 1/3 cup sugar
- 1 teaspoon vanilla
- 1 jar 23 oz lemon filling (about three cups), I used Private Selections California Lemon Fruit Filling

Beat whipping cream, sugar, and vanilla together using these directions for homemade sweetened whipped cream. Fold lemon filling into whipped cream. Chill and serve with pie crust dippers, Nilla Wafers, strawberries, or cookies.
