I’ve never met a cookie that I didn’t like, especially these fabulous big chewy chocolate chip cookies. As time goes by I have to say I’m getting a little more picky and try to save my cookie calories for cookies that are really worth it. I’ve tried recipe after recipe working to find my perfect chocolate chip cookie recipe. I’ve been searching for my ‘go to’ chocolate chip cookie recipe. You know, the you’ve used so many times that you don’t need to pull out the recipe card anymore. I’ve been wanting a recipe that I could commit to. Committing shouldn’t be that hard should it? I have experimented with about every kind of butter you can imagine (softened, melted, browned), tried shortening, oil and different combinations of each of them. With all this effort I never ended up with a cookie that I was super crazy about. I have one recipe that was super soft and really tasty, but always end up flat – like crazy flat. My family doesn’t care what they look like but I do. I also wanted a cookie with a little more substance. And those just didn’t cut it. I needed a cookie that is was a little crisp on the edges but soft and chewy in the middle. I didn’t want a cake-like cookie or a crispy cookie. I know cookies made with melted butter aren’t supposed to spread very much, but mine always end up flat as a pancake. Cookies that I’ve made with shortening don’t have that buttery flavor I crave and while mixing them together was ok – I wasn’t in love with those cookies either. I know, obsessed a little?! Admittedly yes. I needed a cookie recipe in my arsenal that I love and trust and want to make over and over! And guess what? I think I have finally done it! Do you want to know what the secret is? COLD BUTTER!!!! Yes! No time wasted waiting for it to soften or guessing how much time to cheat in the microwave. No melting and cooling. Just grab it straight out of the fridge! Who ever would have thought?!?! Who is in the mood for cookies now? I know I am!
These over-sized cookies are my perfect chocolate chip cookie. They have an amazing buttery flavor with a soft chewy inside and crispy edge.
- 2 sticks COLD butter, cubed
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 eggs
- 1 1/2 teaspoons pure vanilla extract
- 2 1/2 cups all flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 cups chocolate chips
- 1 cup chopped nuts, optional

Preheat oven to 375 degrees. Using mixer, cream butter, granulated sugar and brown sugar together until fluffy. Add eggs, one at a time. Add vanilla and beat until incorporated.
Add flour, salt, baking soda, baking powder, mixing until just combined. Gently fold in chocolate chips and nuts.
Either weigh out your dough into 3 oz portions or use 1/3 cup measuring cup to measure dough loosely packed. Roll dough into a balls.
Place dough balls on baking sheet lined with parchment paper and bake for 12-15 minutes depending on how gooey you prefer your cookies. They will be very light brown. Take care not to over bake. Cool on baking sheet until set. 12 minutes was perfect in my oven. Let finishing cooling on a rack and store in an air tight container.
The first time I try a new cookie recipe, I often run one test batch. I make only one cookie and watch it closely to determine how much it is going to spread and how long I need to bake it. This way I know how far to spread out my next batches and also how long to bake them for. This way I don't ruin an entire batch if something goes funky and I overcook them.
