
Easy White Chocolate Cinnamon Chip Pumpkin Cookies
Ingredients
- 1 15 oz can pumpkin (not pie filling)
- 1 package yellow cake mix I used Duncan Hines
- 1 cup cinnamon chips
- 1 cup white chocolate chips

Preheat oven to 350 degrees. Lightly spray cookie sheet with non-stick spray. In a large bowl stir pumpkin and dry cake mix together. When combined stir in chips mixing until they are evenly distributed throughout cookie dough. Using a medium cookie scoop, place balls of cookie dough 1-inch apart on a prepared cookie sheet. Bake for 13-17 minutes. Mine were perfect after 15 minutes. If you press lightly on the top of the cookies, they should hold their shape and bounce back. If your touch leaves and indent, they are not finished. Transfer to a wire rack. Enjoy!
